Canadian National Oyster Opening Champion & Restauranteur of Notkins Seafood restaurant in Montreal. Daniel has claimed 21 oyster opening wins and hold a Guinness World Record for opening oysters.

Growing up working in Canada's famous Rodney's Oyster House, Eamon found his knack for opening oysters. In his over 10 years of experience in shucking competitions, he has claimed that title of Canadian National Champion six times. Eamon was also part of a World Record breaking team for shucking the most oysters in an hour.

Jesper is head chef at LEGO and prepares meals for 3000 employees every day. Jesper has been been opening oysters for 8 years, competing all over Europe and winning the Danish Championship the last 5 years in a row. In 2013, he took home the title of World Champion in Galway, Ireland.

Johan Malm 33 years old was born and raised in Gothenburg, Sweden. Between running his three restaurants in Gothenberg, Johan finds time to compete for oyster shucking competitions. He has held the titles of 6 time Swedish National Winner, 3 times Nordic Champion, One time world cup holder, and two times (and current title holder) of World Champion in Ireland. Beyond being a restauranteur, Johan is a chef, hunter and fly fisher.

St. Andrews, Florida Native Honor Allen got his passion for shucking oysters at the young age of 12, working for a local oyster bar. At the age of 18 he began shucking competitively, picking up first place titles all over the South. Honor took home the title of US National Champion in 2015


Michael Moran is the 7th generation of the family-run restaurant Moran’s Oyster Cottage; a 300 year old bar and seafood restaurant in Galway on the west coast of Ireland. Michael, a twice World Champion and five time European Champion, is the current Irish Oyster Opening Champion. Michael has competed, presented and judged in oyster opening competitions around the world

Stephen Nolan is from Clarinbridge, "home of the oyster" in Galaway, Ireland. He has claimed the title a two time Irish Oyster Opening Champion, two time Oyster Opening World Cup Champion, four time and current European Oyster Opening Champion (2010, 2011, 2016, 2017). Stephen is currently getting a PhD in Renewable Energy.

Xavier Caille is no stranger to oysters; he's been shucking them for over 34 years. His affinity first began when he was just a boy, tasting an oyster for the very first time in Paris. The rest has been history, and this globe trotting chef has competed in many competitions, claiming the World Champion title in 2013.
